It was crafted by the famed knife specialist Kamata Hakensha in Tokyo’s revered Kappabashi (“Kitchen Town”), not far from HOSHINOYA Tokyo. It features Damascus steel with its characteristic wavy pattern like watered silk along the blade.
This month, we’re giving away a beautiful Santoku knife. The name santoku roughly translates as “three virtues” and refers to the knife’s extreme versatility: it’s designed to excel at slicing fish, cutting meat, and chopping vegetables.
Santoku knives are reputed for being lightweight, well-balanced and extremely comfortable to use. Compared to a Western-style chef’s knife, the blade is thinner and shorter, and the cutting edge is straighter.
Which makes it easy to cut with forward and backwards strokes and to chop straight up and down.
